Next time in the store you check out the pizza kits. But the list of ingredients is not really mouth-watering and it’s still pricey and not homemade.
Cooking dinner yourself has been one of your resolutions for the month. To eat healthier and save money.
But homemade pizza?! Isn’t that a mysterious thing to make? Without an Italian Granny to spell out her best-kept pizza secrets? Do you have to knead the pizza dough forever, feeling your arms getting tired?
Don’t worry. Homemade pizza is one of the easiest things to make. It’s great to prepare with kids and everybody can have a corner to “customize”.

Easy Homemade Pizza
with no Pizza kit …
Did you know I am not a great baker? I’m not. Now you know my dark secret. I love baking but it has to be simple and easy to work out. That is why I like this yeast pizza dough I can make in my old kitchen machine with no fuss and no fancy stuff.
I know many people who dedicate big chunks of their life to finding the perfect homemade pizza dough made with fancy imported ingredients and techniques. Won’t do that. My time is precious and this is the perfect dough if you ask me because it doesn’t give me headaches and comes out fine every time.

Ingredients for homemade pizza dough:
- 300 g (2.5 to 3 cups) all-purpose flour
- 1 package (7 g) dry yeast
- 125 ml (1/2 cup) lukewarm water
- 1/2 tsp salt
- 2 Tbsp olive or vegetable oil
Mix everything well in your kitchen machine and let it run for several minutes. I usually have the dough kneaded in there for 10 minutes. I heard it will be even better to run the machine for 20 minutes or more. But, my old machine cannot run for such a long time without getting hot and I had never any trouble with the dough. Kneading thoroughly for a long time will make the dough elastic and nice. It also should come off the walls easily. If not, add a little bit of extra flour.
Let the dough sit for 60 minutes in a warm and not drafty place. I heat up my oven to 50°C (120°F) while making the dough. Then, I turn it off and put the dough in to rest. (A German chef on TV once said that switching on the oven lamp is sufficient because it will bring the oven to about 30°C/86°F)
Make sure the dough will not dry out and cover it.

Make the more than easy pizza sauce
If I have time I make the classic pizzaiola which is cooking for at least one hour. Then I freeze it in amounts that will be sufficient for one pizza or pasta dish.
After I found this easy pizza sauce recipe I hardly go for pizzaiola because it is so fast to make and saves a lot of energy. Yey… It freezes well, too, so put away what you don’t need immediately.
Ingredients for pizza sauce:
- a can of peeled or sieved tomatoes (240 g, 1.2 cups, 8.5 fl.oz.)
- 2 cloves of garlic
- salt
- pepper
- 1 Tbsp sugar
- basil
- oregano
Mix well with the speed hand blender. Not heating. Period.
Assembling your own gourmet pizza a la Casa
Topping:
- 200 g (1 + 3/4 cups) grated cheese
- Tuna, feta cheese, salami, pepperoni, mushrooms, sweet corn, onion rings, cream cheese with herbs, seafood, …
Now take the dough and knead, adding flour if it is sticky. When the pizza dough is elastic and not too sticky anymore roll out in the size of a pizza baking tray. Grease the baking sheet or use a silicone sheet. I use a 45 x 37 cm (17.7 inch x 14.5 inch) German standard baking sheet that I brush a bit with oil.
Prick pizza dough all over with a fork. Put pizza sauce on it in a thin layer, then some grated cheese and then your favorite ingredients on top. Cover with some more cheese and let it sit for another 15 minutes.

Get the oven on
Now, this easy pizza is ready for baking. Your oven should be preheated to 220 to 250 °C (430°F t 480°F) depending on how thick your homemade pizza has turned out. Bake 10 minutes and check. Bake another 10 minutes if necessary, until the cheese is melted and golden. A rather thin pizza can bake for 10 minutes at 480°F and is ready to eat, a pizza with opulent topping needs more time and should be baked with less heat to not burn before the dough is well-done.

Take the dough and knead, adding flour if it is sticky. When the dough is elastic and not too sticky anymore roll out in the size of a pizza baking tray, for example, 17.7 inch x 14.5 inch.
Grease the baking pan or lay out with baking paper. Put pizza dough on it.
Prick pizza dough all over with a fork. Put pizza sauce on it in a thin layer, then some grated cheese and then your favorite ingredients on top.
Cover with some more cheese and let it sit for another 15 minutes.
Preheat the oven to 450 °F. Bake the pizza for 10 minutes. Check if the cheese is melted and golden brown. If not, give it another 10 minutes.
Adjust the baking
Adjust the baking temperature to 480°F if you have a thin pizza and bake it for 10 minutes. If you have a thick pizza with a lot of topping, bake it at 430°F and give it more time to bake until it is done.

I love your tip about freezing your classic pizzaiola sauce and using it when you need when making pizza. My sister and I love to eat Italian food whenever we get together.
